Blueberry Coffee Cake Low Sugar Recipe

This Blueberry Coffee Cake recipe is different from many of the other low-sugar meals I share here. Most of my recipes are meat-based and naturally low in sugar. This one is different because it is a baked breakfast bread.

I have pretty much eliminated sugar from my diet. When I want sweetness, I use Stevia, a natural sweetener from the Stevia plant of South America. I also tend to use about half of whatever amount is normally recommended.

Sometime a simple bread for breakfast is just something I like. This coffee cake gives me that familiar comfort feeling without spiking my numbers. If you are watching sugar just for average health reasons, you may find this works for you, too.

Low-Sugar Blueberry Coffee Cake Topping

Batter

To make it, mix the flour, baking powder, and Stevia together first. Stir in the melted butter, almond milk, and lemon juice until the batter comes together. Gently mix in the blueberries or raspberries, then spoon the batter into a baking dish lightly greased with olive oil. Sprinkle the topping evenly across the top and bake at 350°F for 45 minutes. Let it cool slightly before slicing.

You can enjoy this with an egg or Greek Yogurt or even a slice of cheese You may even enjoy a couple pieces of Sausage or Bacon. Or just enjoy it alone

Any of these will allow to keep under a carb limit that will not give a high blood level spikes.

Cajun Omelet Great Compliment For Your Blueberry Coffee Cake

If you want something savory to balance the sweetness of the coffee cake, my Cajun Omelet is a great companion dish.

My own personal Cajun Omelet brings flavor without adding sugar or refined carbs. The spice, vegetables, and cheese make it filling ad good tasting.

How I Make This Cajun Omelet

Whisk the three eggs together in a bowl.
Sauté Onions, garlic, green peppers, and red peppers in a little olive oil until softened.
Add some red cayenne pepper spice for heat and a twist of black pepper.
Pour the eggs over the vegetables in the pan. Then Sprinkle cheddar cheese on top. Let cook until the eggs are set, then fold in half and serve warm.

For me this omelet gives great taste and is definitely an omelet with unique flavor. There are plenty of Cajun Omelets but this one has my stamp of ingredients inside.

And for us with Diabetes this is well below my per meal carb limit. And for those who just want no sugar this is perfect. I usually have 1 slice of honey wheat bread or a piece of this Blueberry Coffee Cake which keeps it way below my doctor’s per meal carb limit for me.
