Beef Stroganoff and My Texas Joe Omelet

Beef Stroganoff and my Texas Joe Omelet are simple, satisfying meals that are easy to make. Each one uses just a single pan, which keeps cleanup quick and hassle-free. Although I have seen onions cooked with the noodles, I like mine without onions, but there is onion powder in there for flavor. Onions just don’t fit with the noodles and sauce to me. These ideas are what let me realize a few years ago that I have become a cook.

Beef Stroganoff does not have a lot of different styles but there are different recipes. But I would say it is not like chili where every chili is different. And there is a lot more range of ingredients that are used in chili.

Of course, unlike my Chinese or Italian noodle dishes, for this Beef Stroganoff dish, I cook my whole grain noodles a little differently to fit into my diabetic diet. I start them in a saucepan with just enough water to keep them covered.

After about 4–5 minutes, I drain the water and add the sauce directly to the pan so it finishes cooking with the noodles. It turns into an easy one-pan weeknight dinner. Most whole grain noodles can fit within my limits, and they still taste great.

  • 8 ounces of whole wheat noodles.
  • 1 pound ground beef
  • 1 (10.5 ounce) can fat-free condensed cream of mushroom soup
  • 1 tablespoon garlic powder
  • ½ cup sour cream

While the noodles are cooking, I brown the ground beef. After adding the sauce, let everything cook together until the noodles are tender and the sauce begins to thicken. Keep in mind the sauce will continue to thicken as it cools, so do not overcook it. Let the dish sit for about 5 minutes before serving to allow the sauce to finish thickening. This makes a great one-pan meal for a weeknight after work, or any day for those of us retirees.

I am always looking for recipes that are easy to cook and clean up. That’s why a good one-pan meal like this Stroganoff is one I like because everything cooks together and tastes amazing. Also, I like that there is enough for a complete meal but not too much. I do like leftovers, but usually 1- 3 meals of one item are enough.

Since I do not eat as much as I once did. Beef Stroganoff is enough of a meal all alone. But I like corn with mine or some mixed vegetables with a roll or piece of honey wheat bread.   • 1 pound lean ground beef
  • ¼ cup chopped onion
  • ¼ cup chopped green bell pepper
  • ¾ cup ketchup, or to taste
  • 1 tablespoon brown sugar, or to taste
  • 1 teaspoon yellow mustard, or to taste
  • ½ teaspoon garlic powder

I used garlic, not garlic powder, in my Texas Joe Omelet, and I added just a drop or two of Red Rooster to spice it up even a bit more, and Overall it was pretty tasty. It was definitely a heavy omelet and breakfast. I had some hash browns and juice with my Texas Joe Omelet. Anyways like I said it was interesting to make.
