A Personal Starting Point
Gerald’s Ground Beef Casserole Bake is part of a journey that started two years ago. I lost one-third of my foot because of diabetes, which I did not even know I had. That experience changed how I eat and think about food.
Since then I have been searching, experimenting, and adapting recipes so I can still enjoy real meals without added sugar and without spiking my numbers. I do not claim any of these are “official diabetic recipes.” I am not a doctor or dietitian.
What I can say is this … these are recipes that work for me. They are low-sugar, no-added-sugar meals that let me eat well, feel satisfied, and stay within my own diabetes parameters.
If you are diabetic, I hope these ideas fit within your plan.
If you are not diabetic, you may simply find them to be healthier, cleaner versions of meals you already love.
Try this Ground Beef Casserole Bake you might just like it.
Real food, not “diet food,” that is the focus here. There is no added sugar in this recipe, just simple ingredients you can find almost anywhere. This is a meal you can adjust to your own taste. The goal is food that feels familiar and satisfying, not something you have to force yourself to eat.
These dishes are meant to feel comforting, not restrictive, and they work just as well for one person as they do for a full table. This is not about perfection, it is about practical, everyday eating that you can stick with over time.

- 3/4 cup Cheddar Cheese
- 1/4 cup Swiss Cheese
- 1/8 tsp (or a pinch) Red Cayenne Pepper
- 1/4 tsp Cajun Seasoning

Important Note:
This is another recipe I adapted to my low-sugar way of eating. This is inside my own diabetes parameters for my own meals. Using my low-sugar recipes is a great way for me to reach those diabetes goals.
Step-by-Step Cooking
- Step 1: Brown your ground beef in a skillet with the green peppers, red peppers, onion and garlic. Cook until the beef is fully browned and the peppers are softened.
- Step 2: Toward the end of your cooking time, slowly add the Red Cayenne Peppers, the Cumin and Black Pepper. Mix into to the ground beef you just browned and mix well.
- Step 3: Build the Dish by adding three-quarters of the cheese and the mayonnaise then mix into the browned beef.
- Step 4:Bake: Preheat the oven to 400 and sprinkle the remaining cheese on the top of your mixture. This will allow your dish to get a nice crispy top. Bake for approximately 15 minutes or until the cheese is melted.
- Ste 5: Enjoy This Ground Beef Casserole Bake. I really like some Broccoli with mine. It mixes well because of the cheese.
How I Eat My Ground Beef Casserole Bake
I almost always pair this Ground Beef Casserole Bake with vegetables. My go-to choices are broccoli, whether fresh or frozen, along with Mexican-style frozen vegetables or a California blend. They are easy to prepare and work well with the flavors of the skillet. When I feel like putting in a little extra effort, I will use fresh broccoli, which gives the meal a little more texture and a cleaner taste.
This Ground Beef Casserole Bake can also be served with brown rice, potatoes, or bread, but I pay attention to portions and the type of flour in the bread. I usually go with honey wheat or a small piece that fits within my 15-carb-per-meal limit. Most of the time, that means just one smaller slice. That is enough to round out the meal without pushing things too far.
Since I cook for one, I like to keep things simple. I will often add a small salad on the side, usually red leaf, green leaf, or iceberg lettuce. About half the time I mix in some fresh spinach as well. It is an easy way to add something fresh to the plate without making the meal complicated.
