This is cooking as it should be simple, as little cleaning as possible, healthy and Awesome.

• 1 lb pork, cut into bite-size pieces
• 8 oz tomato sauce
• 1/4 green pepper, chopped
• 1/4 red pepper, chopped
• 1/4 white onion, chopped
• 4 small fresh tomatoes, chopped
• 3 garlic cloves, minced
• 4 oz Ortega green chilies
• 1/4 tsp black pepper
• 1/4 tsp oregano
• 1/4 tsp basil

Marinating the Pork

Marinating the pork is simple and brings everything together. Place the pork pieces into a bowl. Then mix the tomato sauce, garlic, green pepper, red pepper, onion, fresh tomatoes, Ortega chilies, black pepper, oregano, and basil. Mix everything thoroughly [our onto bowl making sure pork is fully coated, then cover the bowl and place it in the refrigerator for about one hour.

This allows the pork to absorb the flavors and makes the meal richer, tender with richer flavor.

Cooking Instructions for Gerald’s Pork Italiano Skillet

Place a skillet on the stove and lightly coat it with Olive Oil over medium heat. Pour the entire marinated mixture and the pork into the skillet, spread it out evenly, and allow it to begin cooking. Stir occasionally to allow it to cook evenly. Let it cook for 20 to 30 minutes, or until the pork is fully cooked, the sauce has thickened, the vegetables are softened, and everything comes together into a rich, flavorful one-skillet meal.

With a Base created with Tomato sauce and Tomatoes you do not need to rely on already packaged and usually sweetened sauces. Garlic in Chilli add flavorful, but they are also mandatory for most of my meals.

Gerald’s Pork Italiano Skillet works well with a variety of simple sides. You can pair it with steamed vegetables, broccoli, or green beans, or add a small portion of rice if it fits within your plan. I have learned, or I am still learning, to like brown rice, although

I will admit I sometimes go with a small portion of jasmine rice. It also holds up just fine on its own if you prefer to keep things simple. Cleanup is easy, too, just a cutting board, one skillet, and a plate.
